I don’t know about you, but I’ve been craving comfort food. With the weather getting chillier and days getting shorter, sometimes you just need to eat something that makes you feel good.
Tonight, I decided to make a paleo lasagna that I found on this AMAZING website.
What is Paleo you ask? It is a way of eating that eliminates processed, sugar laden foods, dairy and grains, and emphasized fresh meat, veggies, fruits, nuts, seeds, and UNPROCESSED foods. (I highly suggest googling it and learning more about this way of eating!)
I personally practice a modified paleo diet (the only meat I eat is fish, and I do have quinoa and gluten-free oatmeal).

This was super easy to make, DELISH, really filling, GUILT free, and a TOTAL comfort food…
(If you follow weight watchers points plus, depending on which sauce you use, it is a 0 point dish!)
